Speculoos (or Biscoff) cookies have a unique flavour that is hard to describe — spiced, crisp, gingersnap-like cookies. They are delicious dunked in tea, and even better in the form of a spread, so why not include it to cake right? Here we have three layers of fluffy vanilla cake that’s filled with a lightly flavoured speculoos buttercream and for the added crunch, we crushed some of the cookies and sprinkle them onto the cream too. Vanilla swiss meringue buttercream coats the stacked cake before drizzling it with more speculoos drip and finished off with speculoos cookie.
